This Months Hot Topic:

Making more from lunchtimes

Julia Saunders is Chef at The Old Cock Inn, a cosy local pub in Droitwich, Worcestershire.

With an already well established lunchtime customer base, Julia was keen to trial the “Lunch Rush” menu from Moy Park Foodservice for two weeks. The aim was to attract more people who have only a little time for lunch, who are seeking good quality, quick food, but not ‘fast’ food.  The Lunch Rush menu proved successful, with up to 20 customers per day ordering from it; about 50% of all orders.  Moy Park Foodservice products featured on the menu included; Diced Chicken Tikka, Crunchy Chick ‘n’ Mini Fillets, Baby Camembert, Spicy Bean Burger and sharing platters which included Roast Chicken Drumsticks, Natural Battered Onion Rings and Brie Wedges, as well as sweet treats such as Apple Pie and Choc Mini Donuts.

Julia explains how she found the products from Moy Park Foodservice; “The Chickwich™ Steak Burger was very popular with customers as were all the menu items.  Customers told us that they liked the texture and the flavour of the Crunchy Chick ‘n’ Mini fillets; the fact that they are made with whole muscle makes all the difference. The Spicy Bean Burgers were lovely and very tasty; as good as home-made and the texture was great. I always used to make mine from scratch and never thought that I could buy any as good as my own until now.”

Staff at The Old Cock Inn also kept a book in which they recorded feedback from the customers:

"All items on the Ultimate Chicken Platter were very good and very tasty."

"The ChickwichTM Steak Burger was much better than others tried before and I would order it again."

"The Warm Chicken Caesar Salad was excellent and very tasty. I would order it again."

"The Crunchy Chick 'n' Mini Fillet in a wrap and the Diced Chicken Tikka pitta bread were both good quality and very tasty. We'd order both again."

Julia thinks that more people would be attracted to The Old Cock Inn if elements of the Moy Park Foodservice "Lunch Rush” menu were kept as a permanent feature.

Top tips for pubs wanting to attract more people at lunchtime
  • Offer a menu that is quick and easy to prepare
  • Serve good quality food to set you apart from being ‘average’
  • Keep your menu offering consistent -  it is always better to be constantly good, than great on some days and bad on others
  • Offer value for money in your menu - ie. Good quality food at a good price
  • Use eye-catching POS around the pub to promote the menu
  • Distribute pre-order forms locally to get people to order their food in advance, making the process even quicker

"The Lunch Rush menu was a success from both a staff and customer point of view; portion control was easy and the consistent, excellent quality meant that customers knew what to expect every time. We will definitely be keeping elements from the "Lunch Rush" menu and will introduce more sharing platters. Moy Park Foodservice products will certainly have a place in my kitchen in future."
